If you only read one line
Medium is the size people run out of first. It's the everyday dinner size — mince, chicken, two portions of something — and it's the most common reorder we see. Small is second.
Extra Large is the size people wish they'd ordered more of. Almost nobody buys enough XL the first time around, and then the butcher does a special.
Leave headroom
Don't fill to the top. You need a clear run of empty bag above the food so the zip closes cleanly and the valve has somewhere to pull air from. A bag packed to the seal is the number one cause of a vacuum that won't hold. Aim for a few centimetres of clear space.
Sizing for the freezer specifically
Flat beats bulky. A Medium bag pressed flat stacks like a book and you'll fit far more in a drawer than the same food in a Large left rounded. If freezer space is the reason you bought this, size down and flatten.
